INFLUENCE OF GRAIN BREAD “WHISK” ON ORGANISMS OF ANIMALS AND HUMANS

The matter of influence of a new kind of grain bread "Whisk" (prepared without pressed yeast - from wholegrain coarse flour) on organisms of animals and humans is considered in the article. In acute experiments on rats it was revealed that introduction of the coarse flour bread to a standard vivarial diet significantly improves structural and functional characteristics of erythrocyte membranes and cells of internal organs of animals. Inhibition of lipid peroxidation of biological membranes of internal organs (liver, kidneys, heart, lungs and brain) occurs; red blood cell membranes permeability decreases; their peroxide resistance increases. Clinical trials have shown that the use of such product, enriched with dietary fibers, vitamins B, E, macro- and micronutrients enhances the binding of bile acids and removes them from the body. Total cholesterol level was significantly lowered from 6.39 ± 0,56 to 5,04 ± 0,46 mmol / l (?<0,05). This index of patients of the control group has not changed.
