Lectins are proteins highly expressed in leguminous plants, which are capable of specifically recognize and bind carbohydrates, including those found in the erythrocyte membrane. The process of cooking food rich in lectins, such as beans, peas and lentils; promote protein denaturation, losing the native structure, and consequently, the ability of carbohydrate binding. This study presents the development of a protocol for practice classes of Biochemistry, permitting an easy way to verify meaningful results, allowing the demonstration of haemagglutinating properties presented by lectins in their native structure, and lost after food thermic treatment. Different ways of cooking were used in order to demonstrate to Nutrition undergraduate students what methodologies are suitable for consumption.

A glycolysis paper puzzle has been used as strategy to teach metabolic pathways, but this kind of game demands a higher number of instructors and limits the follow up of the students’ difficulties. A technology called Augmented Reality (AR) was applied to enable the puzzle usage in large audiences, and to provide feedback to students and instructors. Drafted as flashcards readable by an app installed in tablets, it conveys information as molecules 3D-structure, clues for correct assembling of the metabolic pathway and results of student progression in the activity. Such technological improvement brought more autonomy to students for solving proposed exercises and an embedded performance data collection system helpful to understand, and after to unravel students’ difficulties.

The contents of Biochemistry discipline require previous scientific knowledge and it is often disconnected and fragmented, voiding a meaningful learning. This article describes an experience with the use of an alternative methodology to teach Biochemistry: Concept Maps. The procedural design was based on the use of subject questionnaires before and after reading the Concept Map developed from a subject studied in Biochemistry during the graduation program for the dental school of UFF (RJ, Brazil). Integration of Metabolism is consensus among teachers as a topic able to effectively correlate different concepts as it has been chosen to prepare the Map. The aim of this study was to show this teaching tool that might allow concepts’ integration. The results showed, after using the Map, a higher number of students getting right answers to all proposed questions, suggesting improvement in Significant Learning. Biochemistry is usually characterized by students as a difficult subject. Therefore, several educational approaches have been developed in order to overcome students difficulties. Among these methodologies are the educational games that allow a balance between playing and the improvement of learning and students interest. The game Bioquim4x is an alternative proposal for teaching Biochemistry. The objectives of this game are to review concepts transmitted in classroom, to stimulate various skills of students, such as their creativity, and to correlate Biochemistry with daily events. The game was tested with Biochemistry students and the results highlighted its potential as an educational and ludic activity available for students and teachers. The use of Information and Communication Technologies (ICTs) in the academic environment of biomedical area has gained much importance, both for their ability to complement the understanding of the subject obtained in the classroom, is the ease of access, or makes more pleasure the learning process, since these tools are present in everyday of the students and use a simple language. Considering that, this study aims to report the experience of building learning objects in human physiology as a tool for learning facilitation, and discuss the impact of this teaching methodology.

The online communication tools enable students to new ways of learning, and are important tools in online courses. Considering the focus on collaborative learning, one of the tools highlighted is the discussion forum and which interaction understanding of these interactions may contribute to the improvement of online courses. This work aims to analyze the relations in online discussion forums and seek evidence of their use in a biochemistry and to evaluate the use of other learning tools. In addition to the forums, will be presented the evidence of use of other tools (chats, wiki etc). All these are important tools for teaching and learning processes in an online course. It was observed a greater use of discussion forums that promoted a greater interaction between those involved. It is noteworthy that the students highlighted the need for interaction among themselves for their own learning. The contextualization, the questioning and encouraging dialogue were indicated as a possible way to improve Biochemistry online teaching.
