Öz Uzun yıllardan bu yana günlük hayatta rahatlığı sebebiyle yaygın biçimde kullanılan bi-streç denim kıyafetler günümüzde resmi ortamlarda dahi kullanılmaya başlanmıştır. Kullanımda hareket konforu sunan bu tür ürünler için tüketici kullandığı ürünün estetik görünüm açısından da belirli bir kalite seviyesinde olmasını ister. Buruşma sonucu giysinin istenmeyen bir görüntüye sahip olması kullanıcıyı rahatsız eden bir durumdur. Bu çalışmada farklı elastan çekimi, atkı sıklığı ve doku tiplerinde üretilen bi-streç denim kumaşların buruşma özellikleri incelenmiştir. Atkı ipliği numuneleri, Ne 20/1 penye olarak, %100 pamuk hammaddesiyle ve 78 dtex doğrusal yoğunluğa sahip elastan öz ile 4 farklı elastan çekim oranında (3.07, 3.33, 3.63, 3.99) üretilmiştir. Çözgü ipliği olarak, Ne 16/1 dual-core (55 dtex PBT-44 dtex lycra ) iplik kullanılmıştır. Denim kumaş numuneleri, 3 farklı atkı sıklığında (21 tel/cm, 25 tel/cm ve 29 tel/cm), 3/1 ve 2/2 dimi desenlerinde dokunmuştur. Böylelikle 4 farklı elastan çekim oranında üretilen atkı iplikleri, 3 farklı atkı sıklığında ve 2 farklı desende, çözgü iplikleri sabit tutularak dokunmuş ve üretilen 24 adet denim kumaş numunesinin buruşma özellikleri araştırılmıştır. Çalışma sonuçlarına göre, kumaşların buruşma dayanımı özelliklerinde önemli bir farklılık görülmemiştir. Ancak, buruşma geri dönüşüm açısı test sonuçlarına uygulanan istatistiksel analiz sonucunda, atkı sıklığı ve doku tipinin buruşma geri dönüşüm açısı üzerine etkili olduğu, ancak elastan çekimindeki farklılığın etkisinin olmadığı görülmüştür. Abstract Denim clothing, which has been widely used for many years because of its comfort in daily life, has started to be used even as official wear. Consumers desire an optimum quality level regarding the aesthetic appearance from this type of high movement comfort clothing. Having wrinkles causing an undesired appearance is a disturbing situation for consumer. In this study, wrinkling properties of bi-stretch denim fabrics produced with different elastane draft, weft density and weave types were investigated. Weft yarn samples were produced from 100% cotton raw material as Ne 20/1 combed yarn with 78 dtex elastane core and with 4 different elastane draft ratios (3.07, 3.33, 3.63 and 3.99). Ne 16/1 dual-core (55 dtex PBT-44 dtex lycra ) yarn was used as warp. Denim fabric samples were produced with 3 different weft densities (21 weft/cm, 25 weft/cm and 29 weft/cm) and 2 different weave types (3/1 ve 2/2 twill weave). In doing so, wrinkling properties of the total of 24 denim fabric samples which were produced with 4 different elastane draft ratio, 3 different weft sett levels keeping the warp yarn constant and with two different pattern types were investigated. According to the results, no significant difference was seen on wrinkle recovery of the fabrics. But, as a result of the statistical analysis applied to the wrinkle recovery angle test results, it was observed that the weft density and the weave type have a statistically significant effect on the wrinkle recovery angle, whereas there is no statistically significant effect of elastane draft ratio on wrinkle recovery angle.

Öz Manyetit (Fe3O4), Hümik Asit (HA) ve Gümüş (Ag) önemli özelliklere sahip malzemelerdir. Bu malzemelerin özelliklerini taşıyacak tek bir malzeme sentezlenmesi ve kullanılması bazı uygulama alanları için önemli ölçüde avantaj sağlayabilecektir. Bu çalışmada, sentezlenen Fe3O4@HA@Ag, %5, %7.5 ve %10 ağırlık oranlarında polivinilpirolidon (PVP) içerisine katkılandırılarak elektrospinning yöntemi ile nanolif üretimi gerçekleştirilmiştir. Üretilen nanolifli yapıların yapısal özellikleri X-ışını Kırınımı (XRD) ile morfolojik özellikleri Taramalı Elektron Mikroskobu (SEM) ile spektroskopik ve termal karakterizasyonları da Fourier dönüşümü kızılötesi (FTIR) ve Termogravimetrik Analiz (TGA) ile incelenmiştir. Nanoliflere ait analiz sonuçları değerlendirildiğinde, Fe3O4@HA@Ag katkılı PVP nanoliflerin başarılı bir şekilde üretildiği tespit edilmiştir. Synthesizing a single material which will have all the properties of these materials can provide significant advantages for some application areas. In this study, synthesized Fe3O4@HA@Ag was doped into poly(vinyl pyrrolidone) (PVP), in weight ratios of 5%, 7.5% and 10%, and nanofiber production was carried out by electrospinning method. Structural properties of nanofiber structures were investigated by X-ray Diffraction (XRD), morphological properties by Scanning Electron Microscope (SEM), spectroscopic and thermal characterizations by Fourier transform infrared (FTIR) and Thermogravimetric Analysis (TGA). When the analysis results of nanofibers were evaluated, it was determined that Fe3O4@HA@Ag doped PVP nanofibers were successfully produced.

Öz Bu çalışma ile son yıllarda popüleritesi hızla artan ürünlerden olan enzime dirençli nişastanın (EDN) otoklavlama-retrogradasyon (OR) yöntemi ile eldesi ve ekmek hamurunun reolojik özellikleri ile ekmeğin bazı kimyasal özellikleri üzerine etkisinin belirlenmesi amaçlanmıştır. Başlangıçta bileşiminde EDN bulunmayan saf pirinç nişastasına OR yöntemi uygulandığında içeriğinde %0.57 oranında EDN oluşmuştur. OR uygulanmış EDN (ORN)’nin nem, kül ve toplam nişasta içeriği sırasıyla %8.74, %0.50, %70.82 olarak bulunmuştur. Elde edilen ORN, ekmeklik buğday unu ile yer değiştirme prensibine göre %0, %2, %4 ve %6 oranlarında buğday ununa ilave edilmiştir. Amilograf, Kieffer hamur ve gluten uzayabilirlik testi ve Chen-Hoseney hamur yapışkanlık testleri (CHT) ile farklı oranlarda ORN eklenerek oluşturulan ekmek hamurunun reolojik özellikleri ölçülmüştür. Jelatinizasyonun maksimum noktasındaki vizkosite %6 ilave oranında en düşük değeri (782 B.U.) alırken %2 ilave oranında maksimum kuvvet (Rmax) en yüksek değeri (65.96 g) almıştır. Uzayabilirlik yeteneği %2 ilave oranında kontrol örneğine benzer değerde iken %4 ve %6 oranlarında artmıştır. Yapışkanlık, adezyon kuvveti ve hamur gücü parametreleri üzerine %2 oranında eklenen dirençli nişastanın etkisi olmazken eklenme oranı %4 ve %6’ya çıkarıldığında değerler yükselmiştir. %0, %2, %4 ve %6 oranlarında ORN eklenerek üretilen ekmeklerin dirençli nişasta miktarı ilave oranıyla orantılı olarak artmıştır. Sonuç olarak OR yöntemi ile pirinç nişastasından EDN elde edilebileceği ve %2 oranında ekmek hamuruna eklenen bu ORN’nin reolojik özellikler bakımından kontrol örneğe yakın değerler içerdiği, ancak ekmekte önemli düzeyde diyet lif artışı sağlanabilmesi için ORN’nin en az %6 oranında ilave edilmesi gerektiği sonucuna ulaşılmıştır. Elde edilen EDN fırıncılık ürünlerinin fonksiyonel özelliklerini geliştirmede değerli bir bileşen olarak kullanılabilir. Abstract This study was aimed to investigate the effects of enzyme resistant starch (ERS)which is rapidly growing product in recent years obtained by autoclaving-retrogradation (AR) method, on the rheological properties of bread dough and some chemical properties of bread. In pure rice starch (PRS), while there was not ERS found at the beginning, 0.57% ERS was occurred after AR application. moisture, ash and total starch content of AR applied ERS (A-ERS) were found as 8.74%, 0.50%, 70.82% respectively. A-ERS was added in to wheat flour at 0%, 2%, 4% and 6% levels replacement with wheat flour. Effects of A-ERS on dough rheological properties was evaluated by using amylograph, Kieffer dough and gluten extensibility rig (KER) and Chen-Hoseney Dough Stickiness Rig tests (CHT). The lowest amylograph peak viscosity (782 B.U.) was observed when A-ERS was added at 6% concentration and the maximum force (Rmax) measured with KER was shown the highest value as 65.96 g by the addition of 2% A-ERS. The extensibility increased with the addition of 4% and 6% A-ERS while at 2% addition level it was given the similar values with control sample. CHT tests showed that inclusion of 2% A-ERS did’nt cause any significant change on the stickiness, work of adhesion and dough strength but significant increase on these parameters were observed as the level of A-ERS increased from 2 to 4 and 6% respectively. The amount of resistant starch present in the chemical composition of the bread increased proportionally with the addition rate of A-ERS. As a result; RS was occurred with AR application, substitution at 2% of A-ERS gave rheological values at least as good as the control sample. However, in order to achieve significant dietary fiber increase in bread, it was concluded that A-ERS should be added at least 6% level. Thus it can be suggested that A-ERS can be used as a valuable ingredient to enhance the functional properties of bakery products.

Abstract The goal of the present study was to investigate the effect of tarragon and ripening period on certain quality parameters and the volatile profile of sucuk (Turkish dry fermented sausage). Tarragon was used in sucuk samples at three distinct levels (0.25%, 0.50% and 0.75%), and tarragon-free samples were used as control. Analyses were performed on the 0., 3., 5., 7., 9. and 13. days of ripening time. Although the presence of tarragon did not affect L* and b* values, the pH, a* (P<0.01), aw (P<0.05), and TBARS values of the sucuk samples were statistically affected. Tarragon demonstrated antioxidant activity in sucuk in accordance with 90 % ± 0.3 DPPH scavenging activity. When the volatile profile was evaluated, the key component affected by the addition of tarragon was determined as Anisole, p-allyl-. As a result, while an antioxidative effect was detected during ripening in the presence of tarragon in sausage, undesirable changes were not observed on some quality characteristics such as pH and aw. Öz Bu çalışmada tarhun ve olgunlaştırma süresinin sucuğun bazı kalite parametreleri ve uçucu profili üzerindeki etkisinin araştırılması amaçlanmıştır. Sucuk örneklerinde 3 farklı seviyede (%0.25, %0.50 ve %0.75) tarhun ve kontrol olarak tarhun içermeyen örnek kullanılmıştır. Analizler olgunlaşma süresinin 0., 3., 5., 7., 9. ve 13. günlerinde yapılmıştır. Tarhun varlığı, L*, b* değerlerini etkilemezken sucuk örneklerinin pH, a* (P<0.01), aw (P<0.05) ve TBARS değerlerini istatistiksel olarak etkilemiştir. Tarhun, göstermiş olduğu %90±0.3 DPPH süpürme aktivitesi ile uyumlu olarak sucukta antioksidan aktivite göstermiştir. Uçucu profili değerlendirildiğinde, tarhun ilavesinin etki ettiği major bileşenin Anisole, p-allyl- olduğu belirlenmiştir. Sonuç olarak kullanılan konsantrasyonlardaki tarhun varlığında, sucukta olgunlaştırma sırasında antioksidatif etki tespit edilirken, pH ve aw gibi bazı kalite özellikleri üzerinde arzu edilmeyen değişimler gözlenmemiştir. Abstract In this study, approximate compositions, fatty acid (FA) composition and conjugated linoleic acid (CLA) content of commercial cheeses (n=13) produced predominantly with goat milk in Turkey were determined. FA compositions of cheeses were similar. Major short and medium chain FAs in cheese samples included butyric, caproic and caprylic acids, respectively, according to their relative presence rates. Palmitic, oleic, myristic, stearic, lauric, linoleic and palmitoleic acids were found as the major long chain FAs in all cheese samples while palmitic, myristic and stearic acids were the major saturated FAs in a decreasing order. Palmitic acid was the major FA in cheeses while oleic acid was the dominant unsaturated FA. The ratio of lauric to capric acid was lower than 0.78 in all cheese samples. The range for the total CLA contents of cheese samples was from 1.79 to 4.83 mg/g fat. The highest CLA content was determined in a white cheese sample produced by a mixture of goat (70%) and cow (30%) milk while the lowest value was detected in an Ezine cheese sample produced by a mixture of goat (50%), sheep (45%) and cow (5%) milk. Especially, two white cheeses with a high CLA content could significantly contribute to the daily CLA intake of consumers. Results indicated that commercial cheese samples produced in Turkey had a high variability in their CLA contents. Öz Bu çalışmada, ülkemizde ağırlıklı olarak keçi sütü ile üretilen peynirlerin (n=13) genel kompozisyonu, yağ asidi bileşimi ile konjuge linoleik asit (KLA) içeriği belirlenmiştir. Sonuçlar, tüm peynirlerin yağ asidi bileşimlerinin benzer olduğunu göstermiştir. Farklı peynir örneklerindeki kısa ve orta zincirli yağ asitleri nispi bulunma oranlarına göre bütirik, kaproik ve kaprilik asit olarak sıralanmıştır. Tüm peynir örneklerinde oransal olarak en fazla bulunan uzun zincirli yağ asitleri sırasıyla palmitik, oleik, miristik, stearik, laurik, linoleik ve palmitoleik asit olmuştur. Peynirlerde en fazla bulunan doymuş yağ asitleri olarak palmitik, miristik ve stearik asit belirlenmiştir. Peynirlerde, en fazla bulunan yağ asidi ve doymamış yağ asidinin sırasıyla palmitik asit ve oleik asit olduğu tespit edilmiştir. Tüm peynir örneklerinde laurik asidin kaprik aside oranı 0.78'den düşük bulunmuştur. Peynir örneklerinde toplam KLA içeriğinin 1.79 ile 4.83 mg/g yağ arasında değiştiği tespit edilmiştir. En yüksek KLA içeriği %70 keçi sütü ve %30 inek sütü karışımından üretilen beyaz peynirde, en düşük KLA içeriği ise %50 keçi, %45 koyun ve %5 inek sütü karışımından üretilen Ezine peynirinde belirlenmiştir. Özellikle, iki beyaz peynir örneği, tüketicilerin günlük KLA alımına önemli katkı yapma potansiyeline sahiptir. Çalışma sonuçları, Türkiye’de üretilen ticari peynirlerin KLA içeriklerinde büyük bir değişkenlik olduğunu göstermiştir. Abstract In this study, a novel all-solid-state contact poly(vinylchloride) (PVC) membrane potassium selective sensor with a pyrazole derivative molecule as an ionophore has been developed. The potassium selective sensor has a composition of PVC, ionophore, anion excluder (potassium tetrakis (p-chlorophenyl)borat (KTpClPB)) and plasticizer (bis(2-ethylhexyl)adipate (DEHA)) in the ratio of 32.0:4.0:1.0:63.0 (mg). The potassium selective sensor works in a linear concentration range of 1.0×10-5 to 1.0×10-1 M with a low detection limit of 6.02 × 10−6 M The developed potassium selective sensor works in pH range of 6.0-10.0 and has good repeatability, selectivity and a short response time of 10 seconds. Finally, the developed potassium selective sensor was successfully used in the determination of potassium in tap water and a drug sample. Öz Bu çalışmada, pirazol türevi bir molekülünün iyonofor olarak kullanıldığı yeni tümüyle katı hal kontak poli(vinilklorür) (PVC) membran potasyum sensörü geliştirildi. Potasyum seçici sensör PVC, iyonofor, potasyum tetrakis (p-klorofenil)borat (KTpClPB)) ve plastikleştirici (bis (2-etilheksil)adipat (DEHA))’ın 32.0:4.0:1.0:63.0 (mg)’lık bileşimine sahiptir. Geliştirilen potasyum seçici sensör, 6.02×10-6 M’lık düşük algılama limiti ile 1.0×10-5-1.0×10-1 M konsantrasyon aralığında doğrusal olarak çalışmaktadır. Geliştirilen potasyum seçici sensör pH 6.0-10.0 aralığında çalışmaktadır, iyi tekrarlanabilirlik, iyi seçicilik ve 10 saniyelik kısa cevap zamanına sahiptir. Öz Çalışmada; mandalina, nar ve bal kabağı kabukları gibi meyve kabuğu atıkları kullanılarak geleneksel asit ekstraksiyonu yöntemi ile pektin ekstrakte edilmiştir. Farklı meyve kabukları kullanılarak ve ekstraksiyon koşulları değiştirilerek elde edilen pektinler karakterize edilerek ticari pektin ile karşılaştırılmıştır. Ham madde olarak üç farklı meyve kabuğu, ekstraksiyon ortamı için iki farklı asit türü (sitrik asit ve hidroklorik asit) ve iki farklı ekstraksiyon sıcaklığı (80 °C ve 90 °C) gibi değişen parametrelerle pektin ekstraksiyonları gerçekleştirilmiştir. Değiştirilen bu parametrelerin elde edilen pektin verimine ve pektinin özelliklerine etkisi incelenmiştir. Ekstrakte edilen pektin örneklerinin; nem ve kül içeriği, FTIR analizleri, esterleşme derecesi, eşdeğer ağırlığı, metoksil içeriği ve anhidroüronik asit içeriği belirlenmiştir. Çalışmada elde edilen pektin verimlerinin; mandalina kabuğu için %4.70-14.50, nar kabuğu için %4.40-9.25 ve bal kabağı kabuğu için ise %2.10-4.80 değerleri arasında değiştiği bulunmuştur. Pektin ekstraksiyonu için çalışmada kullanılan meyve kabukları arasında en yüksek pektin verimi bir turunçgil meyvesi olan mandalina kabuğundan %14.50 olarak elde edilmiştir. Yapılan analiz ve karakterizasyon sonuçları; çalışmada elde edilen pektinlerin çoğunlukla yüksek metoksilli pektinler olduğunu göstermektedir. Farklı meyve kabuklarından ekstrakte edilen pektinlerin verimleri, ekstrakte edilen pektinlerin özellikleri ve çevresel etkiler göz önüne alındığında ekstraksiyon ortamı olarak sitrik asitin kullanımının ve ekstraksiyon sıcaklığı olarak 90 °C sıcaklığın seçilmesinin daha uygun olduğu sonucuna varılmıştır. Abstract In this study; pectin was extracted using traditional acid extraction method using fruit peel waste such as mandarin, pomegranate and pumpkin peels. The pectins obtained by using different fruit peels and changing the extraction conditions were characterized and compared with commercial pectin. Pectin extractions were carried out with varying parameters such as three different fruit peels as raw materials, two different acid types (citric acid and hydrochloric acid) for the extraction medium and two different extraction temperatures (80 °C and 90 °C). The effects of these parameters on the pectin yield and properties of pectin were investigated. Moisture and ash content, FTIR analysis, esterification degree, equivalent weight, methoxyl content and anhydrouronic acid content were determined for the characterisation of the extracted pectin samples. The pectin yields were found to be; 4.70-14.50% for mandarin peel, 4.40-9.25% for pomegranate peel and 2.10-4.80% for pumpkin peel. Among the fruit peels used in the study for pectin extraction, the highest pectin yield was obtained as 14.50% from the mandarin peel, which is a citrus fruit. The results of the analysis and characterization show that the samples are mainly composed of high methoxy pectins. Considering the yields of extracted pectins from different fruit peels, their properties and environmental effects, it was concluded that it is more appropriate to use citric acid as the extraction medium and to select the extraction temperature of 90 °C.
