Abstract In this study, the effectiveness of ozone as an alternative bleaching agent to hydrogen peroxide was investigated for cotton bleaching. The conventional method for cotton bleaching uses hydrogen peroxide, therefore; hydrogen peroxide bleaching was applied for preparing control samples. Ozone treatment were applied on the fabric for 2 different temperatures (30 °C-80 °C) and one treatment time (30 minute). The whiteness/yellowness, desizing, tensile strength, weight loss (%), COD (Chemical Oxygen Demand) values were tested and reported. Considering the whiteness/yellowness and desizing values of 30 °C-30' and 80 °C-30', the 30 °C-30' values were better than 80°C-30' values. The reason is probably the less solubility of ozone gas at elevated temperatures. Conventional peroxide bleaching yielded higher whiteness values at the studied circumstances however the COD values were much less for ozone treatment. These values of the hydrogen peroxide were less suitable for the ecological approach compared to ozone treatment. Keywords: Finishing, Bleaching, Ozone, Hydrogen peroxide, Ecologic Öz Bu çalışmada; pamuklu kumaşların ağartılmasında hidrojen peroksit ile ağartmaya alternatif olarak ozon gazı ile ağartmanın etkinliği araştırılmıştır. Pamuk ağartmada geleneksel yöntem hidrojen peroksit ağartması olduğundan kontrol numunelerinin hazırlanmasında bu yöntem kullanılmıştır. Ozon denemeleri 2 farklı sıcaklıkta (30 °C-80 °C), tek süre (30 dk.) ile uygulanmıştır. Beyazlık/sarılık, haşıl sökme, kopma dayanımı, % ağırlık kaybı, KOİ (Kimyasal Oksijen İhtiyacı) değerleri test edilmiş ve raporlanmıştır. 30°-30'da işlem gören numunelerin beyazlık/sarılık, haşıl sökme değerlerinin 80 °C-30'da işlem gören numunelerden daha iyi olduğu görülmüştür. Bunun muhtemel sebebi ozon gazının yüksek sıcaklıklarda çözünürlüğünün düşmesi olarak yorumlanmıştır. Klasik hidrojen peroksit ağartması ile deneylerde çalışılan şartlarda daha yüksek beyazlıklara ulaşılmıştır ancak KOİ değerleri ozon işlemleri için çok daha düşük çıkmıştır. Hidrojen peroksit ağartmasındaki değerler ekolojik açıdan ozon muamelesine göre daha az uygun çıkmıştır.

Öz Doğal lif takviyeli kompozit malzemeler çevre dostu, ucuz ve sürdürülebilir malzemeler olması bakımından endüstride pek çok kullanım alanı bulmaktadır. Bu çalışmada jüt lifi takviyeli ve mantar esaslı sandviç kompozitler üretilerek viskoelastik özellikleri incelenmiştir. Bu amaçla öncelikle jüt lifi/polipropilen (PP) karışımı dokusuz yüzey (nonwoven) kumaşlar ve PP granül kullanılarak ince jüt/PP kompozit plakalar üretilmiştir. Üretilen bu plakalar bir adet mantar levhanın alt ve üst yüzeyine konumlandırılarak basınç altında birleştirilmiş ve sandviç yapılar oluşturulmuştur. Üretilen sandviç yapıların viskoelastik özelliklerini belirlemek amacıyla dinamik mekanik analiz (DMA) testi gerçekleştirilmiştir. Kompozit üretiminden önce liflere uygulanan sodyum hidroksit (NaOH) işleminin kompozit mekanik özelliklerini geliştirdiği gözlemlenmiştir. Üretilen sandviç kompozitlerin inşaat sektöründe yalıtım malzemesi olarak ve ofis alan ayırma panellerinde, aynı zamanda otomotiv endüstrisinde kullanımı amaçlanmaktadır. In this study, jute fiber reinforced and cork based sandwich composites were produced and their viscoelastic properties were investigated. First, thin jute/polypropylene (PP) composite plates were produced by using jute/PP nonwoven fabrics and PP granules. Then these plates were placed on top and bottom faces of a cork plate and consolidated under pressure to produce sandwich composites. Dynamic mechanical analysis (DMA) was performed to determine the viscoelastic properties of the produced samples. It was found that sodium hydroxide (NaOH) treatment of fibers before composite preparation lead to higher mechanical properties of the composites. The produced sandwich composites can be used in construction industry as insulation materials and office partition panels as well as in automotive industry.

Abstract The theoretically calculated modes and optimized structure parameters of 3-amino-1,2,4-triazole have been computed with Density Functional Theory (for two important methods) by using 6-311++G(d,p) basis level. We have calculated all data by using Gaussian 09W. The theoretical structure values and vibrational frequencies of investigated compound have been found to be consistent with the experimental values. It was concluded that the optimized molecular geometric parameters (bond lengths and bond angles) and theoretical frequencies are slightly deviated from the experimental values. Because, in theoretical calculations we have assumed that isolated molecule is in gas phase. But in experiments in fact, molecule is solid phase. So, inter- and intra-molecular interactions have been isolated from real situation. In summary, this study will provide support in future spectroscopic and other related studies. Öz 3-amino-1,2,4-triazole molekülünün teorik olarak hesaplanmış modları ve optimize yapı parametreleri (bağ uzunlukları ve bağ açıları) DFT-Yoğunluk Fonksiyon Teorisi (2 önemli metot için) 6-311++G(d,p) baz setini kullanarak hesaplandı. Tüm verilerimizi Gaussian 09W programını kullanarak hesapladık. İncelenen bileşiğin titreşimsel frekans ve teorik yapı değerlerinin deneysel değerlerle tutarlı sonuçlar verdiği gözlendi. Optimize geometrik parametrelerin (bağ uzunlukları ve bağ açıları) ve hesaplanmış frenkansların deneysel değerlerden biraz saptığını sonucuna varabiliriz. Çünkü teorik hesaplamalarda, gaz fazında izole bir molekül olduğunu farz ederiz. Fakat deneylerde gerçekte molekül katı fazdadır. Bu nedenle iç ve moleküller arası etkileşmeler gerçek durumdan izoledir. Özet olarak, bu çalışma gelecekteki spektroskopi ve diğer ilgili çalışmalara destek sağlayacaktır. Abstract Copper (Cu(II)) is an essential and necessary micronutrient for many plants and animals at very low levels. However, it is toxic to aquatic plants at high levels due to its association with cell membranes. Glassy carbon electrode (GCE) was modified by the 3-phenyl-4-[2-(2-naphthylsulfonyloxy)-benzylidenamino]-4,5-dihydro-1H-1,2,4-triazol-5-one (3-PNO) in 0.1 M supporting electrolyte. The modified surface was confirmed by cyclic voltammetry (CV) and x-ray photoelectron spectroscopy (XPS). According to characterization data, the GCE with 3-PNO was successfully obtained. The GCE with 3-PNO was utilized for Cu(II) ions analysis in water samples. The concentration range and the limit of detection (LOD) were 1.0×10-10 - 2.0×10-8 M and 2.0×10-11 M (S/N = 3), respectively. Öz: Bakır (Cu (II)) çok düşük seviyelerde birçok bitki ve hayvan için gerekli ve gerekli bir mikro besleyicidir. Bununla birlikte, hücre zarları ile birleşmesi nedeniyle su bitkileri için yüksek seviyelerde toksiktir. Camsı karbon elektrot (GCE), 3-fenil-4-[2-(2-naftilsülfoniloksi)-benzilamino]-4,5-dihidro-1H-1,2,4-triazol-5-on (3-PNO) ile 0,1 M destek elektrot içinde modifiye edildi. Modifiye edilmiş yüzey dönüşümlü voltametri (CV) ve X-ışınları fotoelektron spektroskopisi ile karakterize edildi. Karakterizasyon sonuçlarına göre modifiye elektrot başarılı bir şekilde elde edildi. 3-PNO ile modifye edilmiş GCE, Cu(II) iyonunun su numunesinin içinde analizi için kullanıldı. Öz Bu çalışmada öncelikle anilin türevleri diazolanmış ve daha sonra diazolanan bu bileşikler, aril-azo-malononitril (1a-1m) bileşiklerini sentezlemek için malononitril ile reaksiyona sokulmuştur. İkinci olarak 4-arilazo-3,5-diamino-1H-pirazol (2a-2m) türevleri, aril-azo-malononitril (1a-1m) bileşikleri ile hidrazin monohidrat etkileştirilerek sentezlenmiştir. Son olarak bu bileşiklerin diazonyum tuzları barbitürik asit ile reaksiyona sokulmuş ve hedef bileşikler olan 5-(3'-amino-4'-arilazo-1H-pirazol-5'-il-azo) barbitürik asit (3a-3m) bileşikleri elde edilmiştir. 3a-3m bileşiklerinin yapıları AT-IR, 1H-NMR ve Ultraviyole–görünür bölge spektroskopisi gibi spektral yöntemlerle karakterize edilmiştir. Sonuç olarak azo boyarmadde ve tekstil literatürüne 13 adet yeni pirazol türevi dispers disazo boyarmaddeleri kazandırılmıştır. Secondly, 4-arylazo-3,5-diamino-1H-pyrazole (2a-2m) derivatives were synthesized by effecting hydrazine monohydrate with aril-azo malononitrile compounds (1a-1m). Finally, the diazonium salts of these compounds were reacted with barbituric acid and 5-(3'-amino-4'-arylazo-1H-pyrazole-5'-yl-azo) barbituric acid compounds (3a-3m) which target compounds were obtained. The structures of (3a-3m) compounds were characterized with AT-IR, 1H-NMR and UV–visible spectroscopy. As a result, it was gained 13 novel disperse disazo dyes to azo dye and textile literature.

Öz Bu çalışmada, malzeme doluluk oranının kaolen örneğinin kinetik modele dayalı öğütme özellikleri ve model parametrelerine etkileri araştırılmıştır. Bu amaçla, 0.106-0.045 mm arası √2 elek serisine göre 4 dar tane boyutu fraksiyonu hazırlanmıştır. Laboratuvar ölçekli değirmen ünitesinde, sulu öğütme ortamında 10 mm alümina bilya ile fc=0.072, 0.096, 0.120 ve 0.144 malzeme yüklerinde ve %30 bilya yükünde farklı öğütme sürelerinde elde edilen tane boyutu dağılımlarından özgül kırılma hızı ve kümülatif kırılma dağılımı fonksiyonlarına ait model parametreleri (Si, aT, α, γ ve Φj) bulunmuştur. Testlerin sonucunda, azami kapasite açısından malzeme doluluk oranı (fc) için en ideal boşluk doldurma oranı 1.00 olarak tespit edilmiştir. For this purpose, firstly, four different mono-sized fractions were prepared between 0.106 and 0.045 mm formed by √2 sieve series. Si and Bi,j (breakage distribution function and related model parameter) equations were determined from the size distributions at different grinding period, and the model parameters (Si, aT, α,γ and ΦJ) 10 mm alumina ball and wet grinding medium, four different filling ratios (fc=0.072, 0.096, 0.120 and 0.144) and 30% ball filling loads. The results of tests, the optimum interstitial filling ratio for material filling rate (fc) in terms of maximum capacity is determined as 1.00.

Öz ITO altlık üzerine geçirgen NiO (nikel oksit) ince filmler farklı katodik akımlarda elektrokimyasal büyütme tekniği ile büyütülmüştür. Büyütme sonrası filmler 350 °C’de hava ortamında 2 sa. tavlanmıştır. X-ışını kırınım (XRD) örnekleri altlık üzerine büyütülen filmlerin (111), (200) ve (222) yönelimlere sahip tek fazlı kübik yapılı polikristal olduklarını göstermiştir. Soğurma ölçümleriyle büyütülen NiO filmlerin band aralığı 2.85 eV olarak hesaplanmıştır. 310-800 nm aralığında alınan Fotolüminesans (PL) ölçümlerinden NiO ince filmlerin üç emisyon pikine sahip olduğu görülmüştür. Taramalı elektron mikroskobu (SEM) ve atomik kuvvet mikroskobu (AFM) ile büyütülen filmlerin yüzey morfolojisi incelenmiştir. Fourier Dönüşümlü İnfrared Spektroskopi (FTIR) analizleriyle filmlerin oluşumunda Ni-O bağların titreşim modlarına sahip olduğu ortaya çıkarılmış ve filmlerin görünür bölgede %50 ile %80 arasında ortalama bir optik geçirgenliğe sahip olduğu görülmüştür. XPS ölçümleri Ni/O yönelimi ve farklı büyütme koşullarına bağlı olarak büyütülen NiO filmlerin kimyasal bağlanma durumları gibi kimyasal özelliklerini incelemek için gerçekleştirilmiştir. Raman ölçümleri elektrokimyasal olarak büyütülen NiO filmlerinin stokiyometrik olmadığını göstermiştir. Görüldüğü gibi, NiO nanoparçacıkların yoğunluğu ve morfolojisinin optoelektronik aygıtların oluşumunda oldukça önemli olduğu anlaşılmıştır. Anahtar kelimeler: NiO, XRD, Elektrokimyasal büyütme, SEM Abstract Transparent NiO thin films were growth in different cathodic currents by using electrochemical deposition technique on ITO substrates. After deposition, thin films were annealed at 350° for 2 hours in air environment. X-ray diffraction (XRD) patterns indicated that thin films growth on substrates have a single-phased cubic polycrystalline structure with orientations of (111), (200) and (222). Band gap of NiO films growth by using absorption measurements were calculated as 2.85 eV. The data obtained from the measurements of photoluminescence (PL) carried out between 310-800 nm, indicated that NiO thin films have three emission peaks. NiO thin films growth were investigated from the point of surface morphology by scanning electron microscopy (SEM) and atomic force microscopy (AFM). It has been revealed that there are the vibrational modes of Ni-O bonds in the formation of the films with Fourier transform infrared spectroscopy (FTIR) analysis and showed that the films have an average optical transmittance between 50% and 80% in the visible region. XPS measurements were studied to examine the chemical features as chemical bonding states of the NiO films deposited depending on Ni/O orientation and different conditions. Raman measurements displayed that the growth NiO films have not a stoichiometric nature. As seen, it has been understood that the density and morphology of NiO particles are very important in the formation optoelectronic devices.

Öz Bu çalışmada, Zingiber officinale’den toplam polifenollerin ekstraksiyonun kinetiği incelenmiştir. Numuneler farklı sıcaklıktaki suyla ekstrakte edilmiş ve kinetik değişimleri gözlemlemek için ekstraksiyon karıştırılmış ve karıştırılmamış ortamlarda gerçekleştirilmiştir. Ekstraksiyonun fiziksel davranışını matematiksel ifadelerle tanımlamak için Peleg, Kütle Aktarımı, Logaritmik ve Page Modelleri olmak üzere dört farklı model kullanılmıştır. Gallik asit eşdeğeri olarak belirlenen polifenol verimlerinin sıcaklık ve karıştırma koşullarına bağlı olarak 2.29-5.23 mg/g arasında değiştiği bulunmuştur. Araştırılan tüm koşullarda en yüksek regresyon katsayısına sahip olan Peleg Modeli’nin yatışkın durumda, Kütle transfer modelinin ise yatışkın olmayan koşulların ifadesinde deneysel verilere en uygun model olduğu belirlenmiştir. Ayrıca, bu çalışmada ekstraksiyonun moleküler ve konvektif difüzivitesi ve aktivasyon enerjisi de hesaplanmıştır. Ekstraksiyonun aktivasyon enerjisini azalttığı için sıcaklık ve karıştırma hızındaki artışın difüzyon katsayılarını arttırdığı belirlenmiştir. Proseste, sıcaklığın karıştırma hızına oranla çok daha etkili olduğu tespit edilmiştir. Samples were extracted using water at different temperatures and the extraction was realized under mixed and unmixed medium to observe the changes in the kinetics. Four different models, namely Peleg, Mass Transfer, Logarithmic and Page’s Models, were used for mathematically describing the physical behavior of the extraction. The yields of polyphenols determined as gallic acid equivalents ranged between 2.29-5.23 mg/g depending on the temperature and mixing conditions. Peleg’s model, having the highest regression coefficients at all conditions investigated for steady-state conditions, and Mass transfer model for unsteady-state conditions were found as the best fit to the experimental data. Also, molecular and convective diffusivities and activation energy of extraction were evaluated in this study. It was found that increase in temperature and mixing rate increased the diffusion coefficients because they decreased the activation energy of extraction. It has been found that temperature was much more effective than mixing rate, on the process.

Öz Gerçekleştirilen çalışmada yeni nesil karbon bazlı nanomalzemelerden olan grafen oksit polimer içerikli membranın (GO/PIM)yapısına ilave edilmiş ve sentezlenen bu yeni nesil membran ile çevre için oldukça toksik bir özelliğe sahip olan Cr(VI) metali donör fazdan akseptör faza taşınarak uzaklaştırılması sağlanmıştır. Cr(VI)'nın yüksek toksisitesi ve kanserojenitesi bu bileşiği acilen kontrol edilmesi gereken en tehlikeli metallerden biri yapmaktadır. Membran yapısına ilave edilen grafen oksit, mevcut reaksiyon hız sabiti, geçirgenlik, akı ve geri dönüşüm faktörü değerlerine etki ederek verilerde gözle görülür bir artışa neden olmuştur. Modifiye edilen membran yapısındaki plastikleştirici etkisi incelenmiş ve %99.044 gibi oldukça yüksek bir geri kazanım faktörü ile Cr(VI)’nın transportu gerçekleştirilmiştir. İncelenen parametreler doğrultusunda, GO/PIM bizlere daha geniş bir pH aralığında çalışma fırsatı sunmaktadır. Modifiye membranın yüksek sıcaklıklarda kullanım kolaylılığı, uygulanabilirliği, yüksek geçirgenlik ve akı değerleri önemli bir avantaj sağlamaktadır. Oda sıcaklığının üzerindeki sıcaklıklarda GO/PIM membranının yüksek transport verimi sağlaması modifiye edilen membanın termal karalılığının ne derecede iyileştirildiğine dair bir kanıttır. Gerçekleştirilen çalışma GO’in yeni nesil su arıtım teknolojileri için oldukça cazip, uygun ve yenilikçi bir yaklaşım sunmaktadır. Anahtar Kelimer: Nanomalzeme, Polimer içerikli membran, Toksisite Abstract In this study, graphane oxide which is the new generation carbon-based nanomaterials were added to the structure of polymer inclusion membrane (GO/PIM) and Cr(VI) metal, which is highly toxic to the environment, was removed,with this new generation synthesized membrane from the donor phase to the acceptor phase. The high toxicity and carcinogenicity of Cr(VI) make this compound one of the most alarming and urgent metals that must be controlled. Graphane oxide which was added to the membrane structure caused a visible increase in the kinetic results by affecting the rate constant, permeability, flux and recovery factor. The effect of plasticizer was investigated in the modified membrane and the removal of Cr(VI) ions was obtained with highly selective and a high recovery value of 99.044%. In the direction of the parameters were examined, GO/PIM offers us the opportunity to work in a wider range of pHs. The ease of use, applicability and high permeability and flux values of the modified membrane at high temperatures provide a significant advantage. The high transport efficiency of the GO/PIM membrane at temperatures above room temperature is an evidence of how far the thermal stability of the modified membrane has improved.The present study presents a very attractive, appropriate and innovative approach to GO's new generation of water treatment technologies.

Abstract Today's scientific and technical advances have led to significant advances in biosensor technology, leading to widespread use of biosensors in areas such as food technology, the environment, pharmaceuticals and clinical diagnostics, biochemistry, and analytical chemistry. Improvements in the ion-selective sensor technology used in the preparation of potentiometric biosensors and the increase in the number of sensor materials have also accelerated the development of new types of potentiometric biosensors. Thus, in this study, information is given on the development of a new micro sized potentiometric glucose biosensor based on composite pH sensor. Glucose oxidase was immobilized on the composite layer as the biorecognition element. The surface of glucose biosensor based composite pH sensing matrices was first examined for electrochemical elucidation by using cyclic voltammetry and electrochemical impedance spectroscopy. The rate of electron transfer resulted in a stable response behavior of the biosensor and made it a suitable potentiometric sensor for detection of glucose. A linear response in concentration range from 5x10-5 to 1x10-1 mol/L was obtained with a detection limit of 2x10-5 mol/L for the potentiometric detection of glucose. The biosensor exhibited a fast response time (10 s), had good stability, and an extended lifetime. Öz Günümüzdeki bilimsel ve teknik ilerlemeler, biyosensör teknolojisinde önemli gelişmelere yol açarak biyosensörlerin gıda teknolojileri, çevre, farmasi ve klinik teşhis, biyokimya, analitik kimya gibi alanlarda yaygın olarak kullanılmasına neden olmuştur. Potansiyometrik biyosensörlerin hazırlanmasında kullanılan iyon-seçici sensör teknolojisindeki gelişmeler ve sensör materyallerin sayılarının artması, yeni tip potansiyometrik biyosensörlerin geliştirilmesini de hızlandırmıştır. Nitekim, bu çalışmada, kompozit pH sensörüne dayalı yeni bir mikro boyutlu potansiyometrik glikoz biyosensörünün geliştirilmesi ele alınmıştır. Glikoz oksidaz, biyotanıma elemanı olarak kompozit tabaka üzerinde immobilize edildi. Kompozit pH algılama esaslı glikoz biyosensör matriksinin yüzeyi ilk olarak elektrokimyasal tanımlama için dönüşümlü voltametri ve elektrokimyasal impedans spektroskopisi kullanılarak incelendi. Yüksek elektron transfer hızı, biyosensörün kararlı bir tepki davranışına sahip olduğunu ve glikozun saptanması için uygun bir potansiyometrik sensör olduğunu göstermektedir. Glikozun potansiyometrik tespiti için 2x10-5 mol/L saptama sınırı ile 5x10-5 ila 1x10-1 mol/ L konsantrasyon aralığında lineer bir cevap elde edildi. Abstract In this research it is attempted to determine the loss of rutin and total phenolic compounds in rosehip nectar with the heating periods (0, 5, 10, 15, 20 and 30 min) at temperatures ranging from 70 to 95 °C. Spectrophotometric and liquid chromatographic (HPLC) methods were used to determine the concentrations of total phenolic compounds and rutin, respectively. Thermal degradations of TPC and rutin in rosehip nectar were fitted to a first-order reaction kinetic model. Arrhenius relationship was used in order to describe the temperature dependence of reaction. Activation energies for rutin and TPC between 70 to 95 °C were found to be 46.90 and 35.72 J/mol, respectively. Öz Bu çalışmanın amacı, kuşburnu nektarının 70 ile 95 °C sıcaklık aralığında periyodik olarak farklı süreyle (0, 5, 10, 15, 20 ve 30 dk.) ısıl işleme tabi tutulmasına bağlı olarak rutin ve toplam fenolik bileşik içeriğinde meydana gelen değişimin belirlenmesidir. Kuşburnu nektarının rutin içeriği sıvı kromatografisi (HPLC) ve toplam fenolik madde miktarı spektrofotometrik yöntemle analiz edilmiştir. Isıl işlem sırasında, kuşburnu nektarında ısıl işlem uygulamasına bağlı olarak rutin ve TFB içeriğinin bozunması birinci dereceden kinetik modele uymuştur. Reaksiyonun sıcaklık bağımlılığı Arrhenius ilişkisi ile tanımlanmıştır. Rutin ve TFB içeriğinin 70 ile 95 °C sıcaklık aralığındaki aktivasyon enerjileri sırasıyla 46.90 ve 35.72 J/mol olarak bulunmuştur. Öz Nitrit ve nitratın et ürünlerindeki en temel görevi; gıda zehirlenmesine neden olan Clostridium botulinum’un çoğalmasını ve toksin oluşturmasını engellemesidir. Salam ve sosis gibi kürlenmiş, ısıl işlem uygulanmış ürünlerin arzu edilen parlak, pembemsi-kırmızı rengini nitrit ve nitrat kullanımıyla oluşan nitrosohemokrom sağlamaktadır. Et ürünlerinde fazla miktarda kullanılan nitrit veya nitratların bakteriyel indirgenmesi veya gıdada bulunan sekonder ve tersiyer aminlerin nitrit ile reaksiyonu sonucu kanserojenik etkili nitrosaminler oluşmaktadır. Nitrit/nitratların kansorejen risk taşıması sebebiyle tüketiciler doğal gıdalar talep etmektedir. Son zamanlarda bilim insanları et ürünlerinin üretiminde nitrit veya nitrat kullanımına alternatif doğal maddeler üzerine çalışmaktadırlar. Bu çalışmada et endüstrisinde kullanım potansiyeli olan nitrit/nitrata alternatif maddeler konusunda yapılmış çalışmaların derlenmesi amaçlanmıştır. The desired bright, pinkish-red color of the cured, heat treated products such as salami and sausage provides nitrosohemochromium formed by the use of nitrite and nitrate. Bacterial reduction of excess nitrite or nitrates in meat products or reaction with nitrite in secondary and tertiary amines present in food form carcinogenic nitrosamines. Due to the risk of carcinogenicity of nitrite/nitrates, consumers are demanding natural foods. Scientists have recently been working on alternative natural ingredients for the use of nitrite or nitrate in the production of meat products. In this study, it is aimed to compile the studies about nitrite/nitrate alternative substances which have potential use in meat industry.

Öz Üretildiklerinde genellikle sıvı formda olan biyoteknolojik materyallerin kurutularak toz haline getirilmesi, hem stabilitelerini uzun süre korumaları hem de depolama ve nakliye masraflarını düşürmesi açısından oldukça avantajlıdır. Ancak bu ürünlerin kurutulması sırasında hücre canlılığının, biyolojik aktivitenin veya besleyici değerin kaybolması gibi arzu edilmeyen bir takım değişiklikler meydana gelebilmektedir. Kendine has avantaj ve dezavantajları olan püskürtmeli kurutma ve dondurarak kurutma işlemleri biyoteknolojik materyallerin kurutulması için en sık kullanılan yöntemlerdir. Püskürtmeli kurutma işleminde yüksek giriş sıcaklıkları nedeniyle ısıya duyarlı olan materyaller parçalanabilir. Dondurarak kurutma işlemi ise düşük sıcaklık ve basınçta uzun sürede gerçekleşmesi sebebiyle oldukça yüksek işletme maliyetine sahiptir. Püskürtmeli-dondurarak kurutma işlemi (PDK), konvansiyonel dondurarak kurutma ve püskürtmeli kurutma işlemlerinin dezavantajlarını ortadan kaldırarak her iki yöntemi kombine eden oldukça yeni bir kurutma yöntemidir. PDK işleminde sıvı besleme ilk aşamada püskürtülerek küçük damlacıklar haline getirilir. Bu damlacıklar kriyojenik bir ortam ile temas ettirilerek dondurulur ve düşük sıcaklık ve basınç altında süblimasyon ile kurutulur. Püskürtme işlemi ile materyalin boyutunun küçültülmesi donma ve kurutma süresini kısaltarak işletme maliyetini düşürür. Ayrıca, PDK işlemi konvansiyonel dondurarak ve püskürtmeli kurutma işlemlerine göre daha küçük partikül boyutlu, yüksek spesifik yüzey alanına sahip, poroz yapıda partiküller ile sonuçlanır. Bu çalışmada yeni bir kurutma metodu olan PDK işleminin prensibi, avantajları, uygulama alanları üzerinde durulacak, literatürde yapılmış çalışmalar derlenecektir. However, during drying of these materials, some undesired changes might occur such as loss of cell viability, biological activity and nutritional value. Spray drying and freeze drying with their unique advantages and disadvantages are the most commonly used methods for drying of biotechnological materials. In spray drying, degradation of heat-labile materials can take place because of the high inlet temperatures. Freeze drying has high operation costs because of being carried out at low temperature and low pressure for a long time. Spray-freeze drying (SFD) is a novel drying method which combines conventional freeze and spray drying by eliminating the disadvantages of both methods. In SFD process, the liquid feed solution is first sprayed into small droplets. These droplets are frozen by contacting with a cryogenic medium and dried by sublimation at low temperature and pressure. Reduction of the particle size by spraying process reduces the operation costs by shortening the freezing and drying time. Moreover, the SFD process results in smaller particle size, higher specific surface area and porous structured particles than conventional freeze drying and spray drying. In this study, principles, advantages and application areas of SFD process, which is a novel drying method, will be emphasized and the studies in the literature will be reviewed.
