In the study, peroxidase and ascorbate peroxidase are extracted from kiwano (Cucumis metuliferus). It is searched
that the effect of 8 amino acids having acidic, basic, neutral characters (L-Histidine, L-Glutamic acid, L-Threonine,
L-Lysine, L-Arginine, L-Aspartic acid, L-Proline, L-Phenylalanine) on these enzymes’ activity. By being based on 4
different concentrations of each amino acid solution, it is analyzed the impacts on enzymes seperately and calculated
the % relative activity values of enzymes. According to the results, as some amino acids increase the activity of
enzymes, others decreases. Moreover, it is seen that different concentrations of the same amino acid change enzyme
activity.
