Editorial 2015 - 3 Estamos constantemente trabalhando para melhorias e crescimento da REB, nesse sentido, optamos pelo retorno de um número exclusivo para os trabalhos dos eventos relacionados ao ensino de Bioquímica (Brasil e outros países) e dois números para demais seções. Além disso, ampliamos nesse semestre nossa divulgação online. Fomos inclusos no JornalTocs (Collection of Scholarly Journal Tables of Contents), SHERPA/RoMEO e divulgados nas Bibliotecas EZB (Electronic Journals Library - Universität Regensburg), Universiteits Bibliotheek Gent, ILSE - IPN Library Search Ensine, University of Maryland Francis King Carey School of Law e LIS Cuba - Biblioteca Virtual de Saúde (BVS). O Vol. 13, N. 3 da REB é constituído por sete artigos distribuídos em 4 seções. Na seção Pesquisa em Ensino, dois artigos relatam, respectivamente, como diferentes estratégias aumentaram a aquisição de conhecimento por parte da comunidade acadêmica e fora dela, em duas ciências básicas, a Imunologia e a Genética. Na seção Inovações Educacionais, um artigo descreve como é possível com uma metodologia simples, desenvolver o princípio da metodologia analítica da Espectrometria de Massa. O outro artigo apresenta um lúdico aplicativo para dispositivos móveis para facilitar o aprendizado de Bioquímica básica. Na seção REB na Escola, mostra uma criativa e simples técnica para a fácil apropriação dos conceitos de fibras alimentares e dos mecanismos de ação do tubo digestório humano. Na seção Imagem Pública e Divulgação Científica da Bioquímica, são reportadas duas experiências com motivações semelhantes. Uma narrando a formação de uma Liga de Bioquímica Clínica e a outra contando a difusão da ciência em escolas públicas, através interação lúdica com Sistema Nervoso Humano. Atenciosamente Bayardo B. This study aims to report the impact of a set of activities called “Neuroblitzes” taken in order to disseminate and popularize the neuroscience in school environment. The activities took place monthly in public schools in the city of Uruguaiana/RS, Brazil during the year 2014, having as teaching methodology a brief theoretical explanation followed by a practical activity on topics related to neuroscience. In general way, the activities were well received by the students, being classified as good and very good, totaling an average final score giving by students of 8.2, considering a scale of 0 to 10. The teachers of the students also emphasized the benefits of playful and interactive learning activities in brain function. We believe that the activities fulfilled its objectives of bringing the school to the university, arousing the curiosity of students and popularizing the neuroscience.

In this article we present a proposal for an experimental procedure that allows discussing the chemical structure of the fibers and their mechanisms of action in the human digestive tract, relating them to physical and chemical processes of adsorption and absorption. The experiment was designed to be applied in high school, as an alternative to the work our contents, in an interdisciplinary way between chemistry and biology. The materials and reagents used are low cost, easy access and without risk to health of the student. The experiment results are obtained in a short time and can be discussed in the light of chemical and biological concepts customarily worked in high school.

Mass spectrometry is a very important tool to elucidate many aspects of modern biochemistry. This proposal aims to enable that any graduate student get an initial contact with this technique through simulations in practical classes. Low cost and simple implementation enable and facilitate its application. The student can understand the basic principles of mass spectrometry and enable data interpretation obtained through this methodology. This simulation can provide to students an initial contact with modern research tools on Internet databases for structural similarity, as well as the elucidation of possible secondary structures in biomolecules. After application of this proposal it is expected that students can understand better and more critically the data from these advanced characterization techniques largely used in biochemical and molecular sciences.

Editorial 2015 - Especial A área de ensino de Bioquímica integra a reunião Anual da Sociedade Brasileira de Bioquímica e Biologia Molecular (SBBq) desde 1993. Ao longo dos anos, a área foi se estabelecendo e ganhando força e corpo. A materialização desse trabalho ocorreu com o lançamento, pela SBBq, da Revista de Ensino de Bioquímica e Biologia Molecular (RBEBBM), em 2001. Em 2012 a revista passou por um processo de reestruturação, ampliando seu escopo e equipe de trabalho, passando a se chamar Revista de Ensino de Bioquímica - REB (Journal of Biochemistry Education). Visando ampliar a divulgação da REB, a SBBq proporcionou, desde 2013, um espaço físico (estande) dentro da área do evento, para inserção de banners, materiais publicitários e espaço para contatar e dialogar com os visitantes. Uma vez que este ano a SBBq sediou a reunião da International Union of Biochemistry and Molecular Biology (IUBMB), o espaço da revista ganhou destaque pela presença de membros do corpo editorial do Brazil, Chile e Uruguai. O evento ocorreu em Foz do Iguaçu, de 24 a 28 de agosto de 2015 (http://www.sbbq.org.br/iubmb2015). Os participantes puderam conversar com parte da equipe da REB, esclarecendo dúvidas, conhecendo novas informações e compartilhando suas experiências, constituindo-se um importante espaço de diálogo sobre Ensino de Bioquímica, Biologia Molecular e áreas correlatas. Além disso, muitos membros do corpo editorial, por conta da distância física, puderem se conhecer e trocar experiências. Com relação aos trabalhos apresentados na área de educação, durante o evento, houve dois simpósios, além dos 32 painéis apresentados na área de ensino de Bioquímica (área K). As primeiras apresentações ocorreram no dia 25 de agosto (9:00-11:00), no Simpósio 3 (Science Education “Leopoldo de Meis”), mediada pelo prof. Dr. Wagner Seixas da Silva (UFRJ, Brasil), com a apresentação três simposiastas, com as seguintes apresentações: - The Critical Importance of Science Education for Society, por Bruce Albert (University of California - San Francisco, USA); - The Relevance of Neuroscience in Evaluation of Students in Classroom, por Diogo Onofre de Souza (UFRGS, Brasil); - Replacing Prctical Classes with Experimental Projects, por Paulo S.L. Beirão (UFMG, Brazil). O segundo simpósio (PABMB: Teaching biochemistry in a connected world) ocorreu no dia 26 de agosto (15:30-17:30), mediada pelo professor Dr. Miguel Castanho (Universidade de Lisboa, Portugal), com a apresentação de quatro simposiastas: - Hands-on inquiry-based biochemistry courses for improving scientific literacy of school teachers and students, por Andrea T. Da Poian (UFRJ, Brasil); - Keeping 3D resources in the web to learn on protein structure, por Raual Herrera (Universidad de Talca, Chile); - How Apps-Embedded Assessment can contribute to learning outcomes mapping, por Eduardo Galembeck (Unicamp, Brasil); - Using "raw" online data derived from global gene expression experiments for posgraduate teaching activities, por Jose Sotelo (Montevideo, Uruguay). The game “Glicólise e Gliconeogênese” was developed to introduce the collaborative learning of metabolic pathways to Dental School students of the Universidade Federal do Rio de Janeiro. The game starts with 11 cards with the structural formula of the glycolysis intermediates that need to be placed in the correct sequence of structural changes from glucose to pyruvic acid. After that, the students get 10 enzyme cards that indicates the reversibility (or not) of the reaction, the free energy value and activators and/or inhibitors, if this is the case. After answering questions to consolidate the content through observations of the metabolic pathway, the students get five new cards that allow the substitution of the cards need to transform glycolysis in gluconeogenesis. The evaluation by 18 students suggests that the game is a great learning strategy of metabolic pathways that can be used to others than those showed here.

Photosynthesis is a complex process that involves the implementation of several reactions which, many times, makes this content difficult for students to understand. The objective of this study was to investigate if an interactive didactic model, crafted with simple materials, could facilitate the understanding and learning of students on photosynthesis. Initially students of first year high school class from a public school Western of Paraná were asked to diagram what they knew about photosynthesis and respond to a questionnaire. It was concluded that many of the students’ prior concepts were general or inaccurate, such as the idea of photosynthesis being the process of respiration in plants, and O2 coming from the CO2, not from the photo-oxidation of water. These prior conceptions were important for planning the approach to the subject. The process of photosynthesis was then covered in lecture and dialogued, using the interactive didactic model to highlight the explanations. A new questionnaire was completed by the students, and concluded that the use of the interactive didactic model was efficient, since it helped to consolidate correct concepts and simultaneously, introduced new ones as well it shook the equivocal relations.

Recently the popularization and dissemination of science have gained significant expansion. The sciences related to the brain such as neurochemistry and neurophysiology stand out in this scenario. An initiative that would have helped a lot in this process is the Brain Awareness Week, which contributes to the dissemination of the benefits of scientific research in this area. Here we report actions of dissemination and popularization of neuroscience held in the city of Uruguayana/RS/Brazil during the Brain Awareness Week in 2013. Various actions in different contexts and environments were conducted. The results show the importance of the proposed actions for dissemination of neuroscience and neurochemistry to the population. Actions meeting the first objective of popularizing scientific concepts and were very well accepted by participating public, allowing the community approach with the university and with the discourses and practices of neuroscience and its areas.

The Molecular Biology concepts comprehension is important for understanding several Biological processes as well as to establish correlations and interrelations among cell processes and its interaction with the environment. The aim of this work was to evaluate the undergraduate students from the Universidade Federal de Alfenas-MG (UNIFAL-MG) knowledge about gene and DNA concepts as well as to evaluate the effectiveness of drama as an innovative teaching strategy. This strategy was evaluated by the students` knowledge gain and scholar performance. The results showed the UNIFAL-MG beginners’ students presented defective concepts about gene and DNA composition and structure, probably due to deficient teaching-learning process before the University entrance. Drama was an efficient strategy to induce learning gain and to improve scholar performance of classes with a good initial level of knowledge. In the academic programs of Nutrition, Biochemistry is one of the early disciplines, despite of that it is essential. This course includes practical classes in order to improve understanding and make more effective the teaching content, because it are based on direct observations which can elucidate the molecular reactions that teaching Biochemistry depends. This paper main to present the experience of an interdisciplinary practical class based in enzymes, which includes notions of the disciplines of Sensory analysis, Statistics, Cell biology and Technology in nutrition. The experience proved to be useful and effective, showing that pedagogy of rediscovery is important in disciplines in which required a high level of abstraction of students, e.g. Biochemistry. Photosynthesis and aerobic cellular respiration are two metabolic processes that make up the curriculum of Science and Biology, Brazilian Basic Education, regular mode. However, difficulties are found for the understanding of these phenomena because they require abstract reasoning and support of scientific concepts. Thus, to facilitate learning, the game "Photosynthesis and Aerobic Respiration: Let's break head?" was elaborated. The teacher acts with intentionality, through questioning. The advantage of this game is that it can be used from the lessons of Sciences of the 6th year of Elementary School up to High School Biology. Another advantage is that it can be produced by both the teacher and the student. When be used by students, the game has shown promise in the classroom, it provides another opportunity to develop the whole human being in its multiple aspects that are inherent to each.

This paper presents a practical class about the enzymes polyphenol oxidases, which have been shown to be responsible for the enzymatic browning of fruits and vegetables. Vegetables samples were submitted to enzymatic inactivation process with chemical reagents, as well as by bleaching methods of applying heat by conventional oven and microwave oven. Process efficiency was assessed qualitatively by both observing the guaiacol peroxidase activity and after the storage period under refrigeration or freezing. The practical results obtained in this class allow exploring multidisciplinary knowledge in food science, with practical applications in everyday life. Biochemistry is an important and complex science which studies the chemical aspects in living organisms, starting in the structure of molecules, reaching to their metabolic relationships. Learning biochemistry is difficult due to the need to connect the chemical concepts and their relevance in the context of biological molecules. Considering these aspects, this work aims to present a didactic game, Profile – biomolecules, which can be used in Biochemistry courses. It is necessary to diversify the teaching strategies in College education in order to obtain better results in the learning process.

Educational games have been recommended by curriculum guides for biology teaching because they stimulate and promote group activities and foster spontaneous and creative development of students. The use of materials and diversified teaching strategies can facilitate the study of topics such as proteins and their relationship to DNA and RNA, which have some complexity and require a high level of abstraction. In this context we developed the game "Synthesizing Proteins", aimed at high school. The game promotes student recognition, use and interpretation of a meaningful and representative model of a biological system and can assist in developing the skills necessary for research, and scientific and technological understanding. The game comprises of a board containing a drawing of a eukaryotic cell, and cards representing cell structures and biochemical processes involved in protein synthesis.
